Gluten Free Pumpkin Cookies

Tender and moist with an irresistible pumpkin spice flavor - gluten free too!

Ingredients: – Pumpkin puree – Gluten-free flour blend  – Unsalted butter – Light brown sugar  – Granulated sugar – Large eggs – Pure vanilla extract – Ground cinnamon – Pumpkin pie spice – Baking soda and salt – Cream cheese  – Powdered sugar

Step 1:  Cream the butter, brown sugar, and granulated sugar together.

Step 2: Add the eggs and vanilla extract and beat together until light and fluffy.

Step 3: Beat in the pumpkin puree to the creamed butter mixture.

Step 4: Add the flour mixture to the pumpkin and creamed butter mixture and mix.

Step 5: Scoop the cookie dough onto the prepared baking sheets and bake!

Step 6: Beat the frosting ingredients together until fluffy.

Step 7: Once the cookies are fully cooled, ice them liberally with the cream cheese icing.
