Gluten Free Pumpkin Streusel Muffins

Ingredients:Canned pumpkin Pumpkin spiceCoconut oil Almond or nut milk Dark brown sugarOld fashioned oatsGluten-free flour mixSalt & baking soda

Step 1: Add the oil, almond milk, vanilla extract, eggs, pumpkin puree, dark brown sugar, salt, pumpkin spice blend, baking soda, and 1 ¾ cup oats to the blender.

Step 2: Blend the batter until smooth. Mix in the additional ½ cups old fashioned oats .

Step 3: Pour  batter into each of the muffin cups, filling in all 10 muffin cups evenly.

Step 4: Combine streusel ingredients until the mixture is pebble like.

Step 5: Sprinkle each muffin with 2 teaspoons of streusel and bake.
