Ingredients: Coconut Oil Brown Sugar Sugar Large Eggs Mayonnaise  Bananas  Vanilla All-Purpose Flour Whole Wheat Flour Baking Soda  Salt  Cinnamon

Step 1: Cream the coconut oil and sugars together until smooth.

Step 2: Mix the eggs in until smooth and creamy.

Step 3: Add the mayonnaise, mashed bananas, and vanilla. Mix well.

Step 4: Whisk the dry ingredients together in a small bowl.

Step 5: Slowly mix the flour into the batter.

Step 6: Scoop the muffins into a prepared cupcake pan. Sprinkle with chocolate chips if desired. Bake!
