Healthy Pumpkin Cookies

A tender and sweet one-bowl gluten-free cookie recipe with all the flavors of fall!

Ingredients: – Canned pumpkin – Coconut oil  – Large eggs – Pure maple syrup – Pure vanilla liquid extract – Oat flour  – Old fashioned oats – Pumpkin spice blend – Cinnamon – Baking powder & Salt

Step 1:  Whisk together the wet ingredients in a large mixing bowl.

Step 2: Add the dry ingredients into the mixing bowl and whisk until mixed well.

Step 3: Fold the oats into the batter.

Step 4: Scoop cookie batter onto parchment-lined baking sheets. Bake the cookies.

Step 5: Let the cookies cool. While cooling, whisk up the cinnamon maple glaze with a fork.

Step 6:  Drizzle the glaze over the cookies. Let the drizzle dry and serve!
