Sheet Pan Apricot Chicken

Ingredients: - apricot jam - vinegar - Dijon mustard - oil - salt - pepper - chicken breasts - dried apricots - carrots - onions - potatoes - fresh rosemary

Step 1: Whisk together the apricot jam, vinegar, mustard, olive oil, salt, and black pepper.

Step 2: Coat the chicken breasts and dried apricots in the sauce.

Step 3:  Oil your sheet pan, then add the carrots, onion, potatoes, salt and rosemary.

Step 4: Roast the veggies.

Step 5: Remove the veggies from the oven, then add the chicken apricot mixture to the pan and continue roasting.
