Sticky Date Cake  w/ Rum Toffee Sauce

Ingredients: - dates - raisins - vanilla - rum - date syrup - baking soda  - brown sugar - butter - eggs - flour  - alspice - baking powder - salt - whipping cream

Step 1: In a saucepan, combine the dates, raisins, vanilla extract, date extract, rum, baking soda, and hot water and simmer.

Step 2: Pour the dates into a mixing bowl and mash into a paste. Chill.

Step 3: cream together the brown sugar and softened butter until smooth and light brown.

Step 4: Mix the eggs into the mixture one at a time,

Step 5: In a separate bowl, whisk together the flours, allspice, baking powder, and salt.

Step 6: Mix half of the flour mixture into the creamed butter mixture, then mix in half of the date paste.

Step 7: Repeat until the date paste is evenly mixed into the batter.

Step 8: Pour the batter into a prepared bundt cake pan and bake.

Step 9: Make the toffee sauce. Add the brown sugar and butter to a saucepan. Pour in the whipping cream.

Step 10: Bring the toffee sauce to a simmer and cook until sugar is dissolved.

Step 11:Pour the light rum into the toffee and cook.

Pour the toffee sauce over the cake and serve with whipped cream!
