Strawberry Lemon Bars

Ingredients: – lemon zest – lemon juice – granulated sugar – strawberries  – cornstarch – eggs – all-purpose flour – salt – sugar  – butter

Step 1:  Add the lemon zest, lemon juice, granulated sugar, and strawberries to a saucepan.

Step 2: Simmer for 12-15 minutes.

Step 3: Add the cornstarch to the berry mixture and blend.

Step 4: Strain the strawberry mixture. Chill for 30 mins.

Step 5: Pulse the flour, salt, and granulated sugar in a food processor

Step 6: Pulse in cold chunks of butter until a thick dough forms.

Step 7: Gently press the dough into a baking pan.

Step 8: Bake the crust for 23-25 minutes.

Step 9: Whisk the 4 large eggs into the cooled strawberry lemon mixture.

Step 10: Pour the strawberry filling into the crust and bake!

Step 11: Cool the bars for at least 2 hours or until set.
