Healthy  Lentil Soup

Ingredients: - oil - onion - carrot - celery - garlic - parsley - rosemary - Italian seasoning - mushrooms - diced tomatoes - lentils - bay leaf - salt - broth - white wine vinegar - spinach

Step 1: Sauté the onion, carrots, and celery in the olive oil.

Step 2: Add the garlic, dried parsley, rosemary, and Italian seasoning, and mushrooms.

Step 3: Add the diced tomatoes, green lentils, bay leaf, broth, and salt, and bring to a boil.

Step 4: Stir in the white vinegar and baby spinach.

Step 4: Season with more salt and pepper if desired, and top with parmesan!
