Purple Boba is a beautiful and unique ube milk tea with vibrant color and sweet boba. Enjoy boba at home anytime without going to a restaurant or specialty bubble tea shop.
Cook the boba pearls according to the package directions. Drain.
While the boba boils, make the simple syrup: bring ¼ cup of water to a boil in a small saucepan on the stovetop or in a measuring cup in the microwave. Whisk the granulated sugar into the boiling water until the sugar dissolves. Remove the pan from the heat if making the simple syrup on the stovetop.
Stir the drained cooked boba into the simple syrup. Stir and let sit for 10-15 minutes.
Brew the tea in 1 cup of hot water according to the package instructions.
Add half of the boba, as much of the simple syrup as desired, half of the tea, and ¼ teaspoon of the ube extract to EACH of the two large glasses. Stir well.
Add a large handful of ice to each glass. Divide the milk between the two glasses. Add extra simple syrup to taste and enjoy!
Notes
If using sweetened plant milk, you may want to reduce the amount of simple syrup in the drinks.
These drinks are best consumed fresh, as the tapioca can get tough or gummy when stored. If this recipe makes more than you can consume in one serving, divide the recipe ingredients in half and follow the directions as listed.
Soak Boba in Simple Syrup: Soaking the boba in simple syrup for at least 10 minutes is essential to sweet boba.
Tea: Use your favorite variety of black or green tea such as Earl Grey or jasmine tea, brewed according to the package instructions.
