Hi, I'm Chelsea Mae Plummer โ€” the recipe developer, food photographer, and certified running coach behind Mae's Menu.

I've been cooking since I was 13 years old, when I started making dinner for my family. I never stopped! What started as a middle school hobby turned into a genuine obsession โ€” and eventually, a career. I'm a self-taught chef and food photographer who quit a digital marketing career in 2019 to do what I love full-time.

I graduated from Northwestern University and am an RRCA Certified Level 1 Running Coach. I'm also a 9-year marathon runner who recently qualified for the Boston Marathon โ€” which means I understand firsthand how food fuels performance. I eat what I preach!

At Mae's Menu, you'll find easy, balanced, and delicious recipes designed for active people โ€” whether you're a marathon runner, a Hyrox competitor, a busy parent, a weekend athlete, or just someone who wants to eat well without spending hours in the kitchen. Every recipe is developed and tested multiple times in my Fort Collins, Colorado kitchen at 5,000 feet of elevation, so you'll find high-altitude baking notes throughout the site.

As a mom to an active toddler, I know the dinner-table reality โ€” recipes have to be quick, nutritious, and toddler-approved, or they don't make the cut. You'll find that balance throughout Mae's Menu.

My philosophy: food should fuel your adventures, not stress you out. That means real ingredients, achievable techniques, and flavors that make you actually want to cook.
