About Chelsea Plummer
Hi, I'm Chelsea Mae Plummer. I'm a professional recipe developer, food photographer, wife, and mother based in Fort Collins, Colorado. Welcome to my little corner of the internet!
I believe food should be accessible, nutritious, doable, and delicious! After all, it fuels us for all life's activities and adventures. I'm a marathon runner of 7+ years, RRCA certified level 1 coach, and recently qualified for the Boston Marathon.
As a mother to an active toddler, business owner, and athlete, I know how hard it can be to get tasty and nutritious meals on the table that the whole family will love.
I work hard to develop easy, quick, and nutritious recipes you can count on to fuel you through all of life's adventures, whether working, parenting, studying, participating in sports, or more!
Mae's Menu's Origin Story
I started Mae's Menu in 2019 after I quit my job in digital marketing. I always loved food and cooking. In fact, I've been developing recipes since I was in middle school! Finally, I realized that though it sounds clichรฉ, it's true โ life is too short to not be doing what I love!
Since then, I've learned food photography and discovered that I really love food writing and SEO. I am so grateful every day to have a job that challenges me and that I love.
If you'd like a taste of my favorite recipes, I recommend you try my Marry Me Salmon, Brownie Baked Oatmeal, Blueberry and Spinach Smoothie, Neapolitan Pizza Dough, Honey Garlic Lemon Pepper Chicken, or Bagel French Toast.
Readers also love my Pineapple Poke Cake, Chicken Miso Soup, Meyer Lemon Curd, and White Cheddar Mac and Cheese.
Since hitting publish on the blog, I've had the honor of being published in Parade, Fox News & Lifestyle, Well + Good, TheKitchn, OpenFit, NoCo Style Magazine, Voyage Denver Magazine, Diet Mango, appearing on Portland's KATU Afternoon Show, and releasing my first eCookbook, Fueled: 30-Minute Dinners to Live and Run Well!
