Mae’s Menu’s mission is to create healthy recipes & inspiration for runners, athletes, and other active people.
We believe that food is fuel and therefore should be healthy, accessible to all, and approachable for any lifestyle. We know that life gets busy. We work hard to provide healthy meals, recipes, and meal planning tips that can help keep even the busiest week healthy and sane.
We believe that anyone can cook healthy meals with the right recipes and direction. Around here, there’s no such thing as a bad cook, just not great recipes. So we strive to write the best and easiest to read recipes so everyone can confidently enjoy cooking and nourishing themselves with amazing food.
We believe in balance; that physical health doesn’t come from obsessive restriction, but from adding in nutritious foods that nourish the body. Because of the mind-body connection, nourishing physical and mental health means eating more classically healthy foods while also occasionally enjoying more indulgent and heart-warming recipes built on the basis of whole foods.

Hi! Thank you so much for joining us! I’m Chelsea (Mae) Plummer. I’m a home cook of 20+ years, avid runner and reader, and dog mom to a rambunctious yellow lab, Allie.
You can now find me in the kitchen developing recipes or on the computer writing up my accompanying blog posts most days, but I’ve had stints in digital marketing, non-profit work, childcare, and I'm also a licensed hairdresser. I got my B.S. from Northwestern University in Human Development & Psychological services so you could say I like to read and think about mental health and wellness quite a bit, too.
I launched Mae's Menu in March of 2019 and it's been such an amazing ride ever since! I've loved getting to chat online with readers and always love hearing what new recipes you would like to see on Mae's Menu. Since hitting publish, I've also had the honor of being published in NoCo Style Magazine and Voyage Denver Magazine.
I believe in creativity, balance, and investing in family and friends, and learning more about the world through travel, reading, and constant curiosity. Though I'm not a registered dietitian, I've been obsessed with nutrition ever since recovering from an eating disorder in my teens. I always make sure to link to substantiated scientific resources when making any nutritional claims, however.
Another topic I am passionate about is sharing a balanced diet and active lifestyle that has brought me so much joy, energy, freedom, and an ever-growing peace with my body over the years. Life is too short to be unhappy in our bodies and we need to work together to dismantle diet culture.
Since my mid-twenties, I've run 10 half marathons, 4 marathons, and more than a handful of 5Ks. My current running goals are to stay in love with running, continue rehabbing my hamstring pull, and to eventually qualify for the Boston Marathon.
It’s my privilege and joy to bring you recipes for your active lifestyle: running recipes, quick and balanced meals for busy days, and meals and recipes for other active athletes and adventurers. In the process, I throw in quite a few gluten free, dairy free, no processed sugar, and vegan recipes but the only dietary preference I personally subscribe to is balance.
To reach that end, I also occasionally share gourmet recipes that are perfect to enjoy on a Sunday afternoon or relaxing evening with friends. Either way, I’m always striving to build my recipes off of a majority of varied whole foods to best harness the nutrients that bring us health.
