1lbapple chicken breakfast sausagesliced into ½-inch pieces
½yellow or white oniondiced
1 ½lbsfrozen tater tots
1 ½cupshredded sharp cheddar cheese
8large eggs
1teaspoonsalt
1, 1oz.package French onion dip mix
1 ½cup1% or 2% milk
Instructions
Preheat the oven and spray an 8 x 13-inch pan with non-stick cooking spray.
Saute the chicken sausage and onion in the olive oil over medium-low or medium heat for 5-6 minutes, stirring frequently, or until the onion is translucent and the sausage is browned.
Layer the tater tots evenly in the prepared baking pan.
Scatter the chicken sausage and onion over the tater tots.
Sprinkle the cheddar cheese over the sausage mixture.
In a large mixing bowl, whisk together the eggs, salt, onion dip mix, and milk until combined.
Pour the eggs over the sausage and tater tots. Cover the pan and bake for 30 minutes. Remove the cover and bake until the eggs for 30-35 minutes, or until the eggs are set throughout and golden brown around the edges.
Notes
1. Leftovers last covered in the refrigerator for 4-5 days. They do not freeze well.
