Peanut butter bon bons are easy no-bake chocolate candies with a creamy and crispy peanut butter center and rich chocolatey coating on the outside. They’re rich, satisfying, and perfect for any occasion calling for an indulgent dessert such as Christmas or Valentine’s Day.
¾cupcocoa crisp cereallike Cocoa Krispies or Cocoa Pebbles
1cupsemisweet chocolate chips
1tablespoonvirgin coconut oil
Instructions
Prepare a large baking sheet with parchment paper or a silicone baking mat.
In a large mixing bowl, cream the peanut butter and butter together until smooth and runny, scraping down the sides of the bowl while mixing.
Add the vanilla extract, salt, and confectionary sugar to the peanut butter. Mix until the dough sticks together and forms a thick mass, scraping down the sides of the bowl as needed.
Gently fold the chocolate crisp cereal into the peanut butter mixture.
Scoop the dough by scant 2 tablespoons (or smaller -- according to your preference). Roll the dough into a ball. Place on the lined cookie sheet and repeat with the rest of the dough, forming about 18 balls.
Chill the balls for 30 minutes - 1 hour, or until firmed up.
Melt the chocolate and coconut oil together in a small mixing bowl in the microwave at 20-30% heat for 30-45 second intervals, stirring between intervals, or until smooth
Using a toothpick, dip a peanut butter ball into the melted chocolate and turn the ball in the chocolate or drizzle with chocolate until covered. Let excess chocolate drip off the bon bon.
Return the bon bon to the prepared baking sheet and glaze the remaining balls with chocolate.
Chill the bonbons in the refrigerator uncovered for 1 ½ - 3 hours, or until the chocolate has completely set, or is a matte color and hollow sounding when tapped. Enjoy cool!
Notes
Leftover bon bons will last covered in an airtight container for up to 7 days. They can also be frozen in a freezer-safe container for up to 3 months. Bon bons keep and serve best cooled, as they will melt in heat.
