Tender, golden, and naturally sweet, Honey Roasted Rainbow Carrots are a comforting and delicious easy side dish recipe! Don't have rainbow carrots? No worries, traditional orange carrots can easily work in their place.
4cupsor 1 ½ lbs rainbow carrots, peeled and cut into ¼-inch match sticks
¼teaspoonsalt
1tablespoonhoney
2tablespoonschopped parsley
Instructions
Preheat the oven to 425 degrees Fahrenheit.
Drizzle the olive oil on a rimmed cookie sheet. Add the carrots to the sheet and toss in the oil until covered. Season the carrots with salt and toss until covered.
Roast the carrots for 25 minutes, turning them 15 minutes through the cooking time, or until the carrots are golden, tender, and cooked through.
Drizzle the carrots with the honey. Gently toss until covered. Sprinkle with parsley and serve hot!
Notes
Leftovers keep covered in an airtight container in the refrigerator for 4-5 days. They do not freeze well.
To make vegan glazed carrots, substitute maple syrup or agave syrup for the honey. The flavor will be slightly different but still delicious.
