Candied Whipped Sweet Potatoes are light, creamy, sweet, and flavorful. They're as perfect for a holiday side dish as they are for weeknight dinners. Mad with just a few simple steps and with common ingredients. Naturally gluten-free and easily made vegan and dairy-free.
4large sweet potatoesor about 3 ½ - 4 lbs sweet potatoes
3tablespoonsbutter
¼teaspoonsalt
1 ½teaspoonsground cinnamon
¼cuptablespoons packed light brown sugar
2-4tablespoonsmilkoptional
Instructions
Preheat the oven to 425 degrees Fahrenheit.
Place the scrubbed sweet potatoes on a foil lined baking sheet. Bake the potatoes for 1 hour - 1 hour 20 minutes, or until the sweet potatoes are baked through and are pierced easily with a fork.
Let the sweet potatoes cool at room temperature for 5-10 minutes, or until the skin is cool enough to touch.
Being careful not to burn yourself, scoop the pulp out of the sweet potato skin. Place the sweet potato pulp in the bowl of a stand mixer fitted with the whisk attachment (or in a large mixing bowl if using a hand mixer).
Add the butter, salt, cinnamon, and brown sugar to the sweet potatoes. Whip the potatoes on medium-high speed until light and fluffy. If the sweet potatoes are too dry for your liking, whip in 2-4 tablespoons of milk on low speed or until your desired consistency. Serve the sweet potatoes hot with a pat of butter on top if desired.

Storage Directions
Refrigeration: Leftovers keep covered in an airtight container in the refrigerator for 4-5 days.
Freezing: Leftovers can also be frozen in a freezer-safe container for 2-3 months. Defrost the sweet potatoes in the refrigerator for 12-24 hours before reheating
Reheating: Warm the sweet potatoes on medium heat in the microwave for 1-2 minutes intervals, stirring the potatoes between heating intervals.

Vegan and Dairy-Free: Substitute vegan butter and non-dairy milk for unsalted butter and milk.
Processed Sugar-Free: Substitute 3 tablespoons of maple syrup or ¼ cup coconut sugar for the packed light brown sugar to make these mashed potatoes without processed sugar.
Other Whipping Options. If you do not have an electric mixer, the sweet potatoes can also be whipped up in a food processor or mashed with a potato masher. If mashed, however, the potatoes won’t be as light and fluffy.
