1 14oz.can beansnavy beans, garbanzo beans, cannellini, or black beans; drained
1 ½cupfrozen cornor 1, 14 oz. can of corn, drained
½cupor 1, 4 oz. can canned green chiles (can also use frozen & thawed chiles)
1 ½cupsalsa verdespice level to taste
8cupsor 2 quarts low-sodium chicken broth
1tablespoonlime juiceor the juice of half a lime
¾cuphalf & half
Salt and pepperto taste

tortilla chipssour cream, cilantro, extra lime, sliced black olives
Instructions
Preheat the oven to 425 degrees Fahrenheit. Spray a rimmed baking sheet or baking pan with non-stick cooking spray. Add the chicken to the pan and season with the ¼ teaspoon salt, ½ teaspoon cumin, and ¼ teaspoon dried Mexican oregano.
Bake the chicken for 20-24 minutes, or until the chicken is cooked through and has reached an internal temperature of 170 degrees Fahrenheit. Let the chicken cool for 5-10 minutes and shred with two forks or in a stand mixer fitted with the whisk attachment.
While the chicken bakes: in a stock pot or Dutch oven, heat the olive oil over medium heat. Add the onion and bell pepper. Sauté for 5-6 minutes, stirring frequently, or until the onions are translucent. Add in the garlic and the rest of the cumin, oregano, and coriander. Sauté for 2 more minutes, stirring frequently, or until fragrant and the garlic is just golden.
Add the beans, corn, green chiles, salsa verde, and low-sodium chicken broth to the pot. Give the mixture a few good stirs. Increase the heat to medium-high and bring the soup to a boil. Reduce the heat to medium and simmer for 15 minutes.
Add the shredded chicken and lime juice to the soup. Stir well. Bring to a simmer and heat for 2-4 minutes, or until the chicken is heated through.
Reduce the heat to low and stir in the half and half until combined. Season with salt and pepper to taste. Serve hot with your favorite toppings!
