If you love bold and refreshing pizza flavors, BBQ Chicken Flatbread is the perfect addition to your dinner menu. Chicken flatbread pizza is saucy, savory, and ready in under 20 minutes with no kneading required.
Preheat the oven to 400°F. Prepare two large baking sheets with aluminum foil or parchment paper.
Combine the barbecue sauce and seasonings in a medium saucepan. Heat on the stovetop over medium heat for 2-3 minutes, stirring occasionally, or until combined and saucy. Add the chicken to the BBQ sauce. Stir to coat and heat the chicken in the sauce for another 2-3 minutes, or until the chicken is thoroughly heated through. Remove the saucepan from the heat.
Lay the flatbreads or pita breads out on a single layer on the prepared baking sheet. Spread ½ cup of the BBQ chicken mixture on each pita. Top the BBQ chicken mixture with 1 tablespoon of red onion, 1 ½ tablespoons of sliced black olives, and a heaping ⅓ cup of shredded cheddar cheese.
Bake the flatbreads for 8-10 minutes, or until the cheese is melted. Turn the broiler on high and broil the flatbreads for 1-2 minutes, or until the cheese is bubbling and the edges of the flatbreads are golden brown.
Sprinkle the flatbreads with cilantro, green onions, and pickled jalapeños (if using). Enjoy hot with sour cream to dip, if desired.
Notes
Storing: Leftovers keep covered in an airtight container in the refrigerator for 1-2 days. The ingredients can also be stored separately covered in the refrigerator for 4-5 days and heated up according to the recipe directions as desired.
Reheating: Reheat already cooked/assembled pizzas in an oven or air fryer preheated to 300 degrees for 3-5 minutes, or until heated through.
Freezing: Freeze assembled flatbreads by freezing them flat on a baking sheet for 1-2 hours and then transferring them to a large zip-top bag. Add 2-3 minutes of additional cooking time if baking from frozen. Baked flatbread can be wrapped in plastic wrap and frozen in a freezer-safe container. Store frozen flatbreads for up to 3 months.

Grilled BBQ Chicken Flatbreads: Flatbreads can be cooked on an outdoor propane grill preheated on a medium setting. Grease the grill or brush the bottom of the flatbreads with oil before assembling. Grill with the lid closed for 5-8 minutes or until the cheese is melted and bubbly.
