Preheat the oven to 350 degrees Fahrenheit. Line an 8 x 8-nch baking dish with parchment paper and spray non-stick cooking spray or grease with butter.
In a large mixing bowl, whisk together the melted butter, large eggs, brown sugar, sugar, vanilla extract, and ube extract until combined.
Add the flour, cornstarch, ube powder, baking powder, and salt to the wet ingredients. Whisk well to combine.
Fold in the white chocolate chips and shredded coconut (if using) until combined.
Spread the batter into the prepared pan. Bake for 32-36 minutes, or until a toothpick inserted into the center comes out clean and the top of the brownies looks shiny.
