Notes
1. How to make buttermilk: add 2 tablespoons of white vinegar to a 2-cup measuring cup. Fill with dairy or nut milk to the 2 cup line. Stir gently. Let the mixture sit for at least 5 minutes, or until slightly curdled. 2. Keep freshly baked waffles warm until serving in an oven preheated to 200 degrees Fahrenheit. 3. Leftover waffleskeep best in a freezer-safe container for up to 2 months. To keep the waffles from sticking together, store them with small pieces of wax or parchment paper between them. 4. Reheat waffles in a toaster oven on low heat for 1-2 minutes, or until golden brown and crisp. 5. Equal parts of regular whole wheat flour and all-purpose flour (1 ⅓ cup each) can work as a substitute for the whole wheat pastry flour.
