This cozy spiced pear sauce is sweet, fragrant, and full of fall flavor. Make it smooth or chunky, enjoy it warm or chilled, and serve it with anything from pancakes to roast pork—or sneak a spoonful straight from the jar.
9-10cups (about 4 lbs)ripe pearscored and cut into large chunks (can peel if desired for chunky applesauce, but not required)
⅓cuporganic cane sugaroptional (see notes)
1teaspoonground cinnamon
½teaspoonground cardamom
½teaspoonground ginger
1tablespoonlemon juice
¾cupwater
Instructions
Add all the ingredients to a large pot or Dutch oven. Stir well to combine.
Bring the pot to a boil over high heat. Reduce to medium-low and simmer uncovered for 30-35 minutes, stirring occasionally, until the pears are soft.
Remove the pot from the stove. Blend with an immersion blender or very carefully transfer it to a high-speed blender, remove the lid’s vent, and blend. For chunky applesauce, mash it with a potato masher (this works best when using peeled pears).
Cool for 15-30 minutes or until room temperature before enjoying or refrigerating.
Leftovers keep covered in an airtight container in the refrigerator for up to 7 days or can be frozen in a freezer-safe container for up to 3 months. They can also be canned.
