These Strawberry Rice Krispie Treats are soft, chewy, and packed with real strawberry flavor thanks to freeze-dried strawberry powder folded into buttery, melted marshmallows. Finished with crisp Rice Krispies and pops of mini M&Ms and sprinkles (if you please), they’re an easy no-bake treat that’s perfect for Valentine's Day, Mother's Day, showers, book clubs, and sweet treat cravings.
1cupmini Valentine’s Day M&Msor regular mini M&Ms, divided
¼cupValentine’s Day sprinklesor more M&Ms
Instructions
Spray an 8x13-inch baking dish with nonstick spray and set aside.
Melt the butter in a large nonstick pot over medium heat.
Stir in all about 2 cups of the marshmallows and heat until melted and smooth.
Remove the pot from the heat. Stir in the vanilla extract and strawberry or raspberry powder until smooth and combined.
Gently fold in the Rice Krispies, the remaining 2 cups of marshmallows, and ¾ cup of M&Ms until the mixture is evenly coated and combined. Be careful not to overwork the mixture or the treats get too hard.
Pour the mixture into the prepared baking dish, spread it out lightly, and evenly top with the sprinkles and remaining M&Ms. Gently but firmly press the treats into the pan (I like to do this by placing parchment paper on top and pressing down until even).
Cool at room temperature for 30 minutes to 1 hour or until set. Cut into squares with a plastic knife and enjoy!
Notes
Storage Directions — Store leftovers in an airtight container at room temperature, away from heat and direct sunlight, for 2–3 days or in the refrigerator for up to 5 days. The texture may change slightly when chilled, but they’ll still be tasty.Recipe Pro-Tips
Prep all ingredients before you start. Once the butter and marshmallows begin melting, things move quickly, so having everything measured and ready prevents rushing, burning, or sticking.
Melt the marshmallows gently. Use a large nonstick pot over medium heat, stirring frequently so the marshmallows melt smoothly without scorching or stiffening.
Remove from heat before adding flavorings. Stirring in the vanilla extract and strawberry powder off the heat helps preserve flavor and prevents overheating the melted marshmallow mixture.
Don’t overwork the mixture. Gently fold until just combined—overmixing or pressing too firmly will result in dense, hard treats rather than soft, chewy ones.
Use a plastic knife for clean slices. A plastic knife cuts through the set treats easily with less sticking, though a metal knife works if that’s what you have.
