These Air Fryer Chicken Bites are crispy, juicy, full of flavor, and are ready in under 20 minutes! Best of all, they don't require any of the mess or fuss of breading, making them a super-quick and easy meal!
1 ½lbsboneless skinless chicken thighscut into 1 ½ inch sized pieces
2tablespoonscornstarch
1tablespoonlow-sodium soy sauceuse coconut liquid aminos if gluten-free
¼teaspoonsalt
Freshly cracked pepperaccording to taste
2tablespoonspacked light brown sugar
1teaspoondried parsley flakes
¼teaspoondried thyme
1teaspoongarlic powder
1teaspoondried rosemary
Pinch- ¼ teaspoon cayenne pepperadjusted to taste
Additional soy sauce to serveoptional
Instructions
1. In a medium-size mixing bowl, toss the chicken pieces with cornstarch until covered.
2. Drizzle the chicken with the sodium soy sauce and sprinkle it with salt, black pepper, light brown sugar, parsley flakes, thyme, garlic powder, rosemary, and cayenne pepper. Toss the chicken until evenly coated in the seasoning mixture.
3. Preheat the air fryer and basket at 400 degrees Fahrenheit for 2-3 minutes.
4. Add the chicken to the air fryer basket. Air fry the chicken for 11-14 minutes, turning the chicken with a spatula every 3 minutes, or until the chicken is crispy and cooked through to an internal temperature of 175 degrees Fahrenheit.
Notes
Use the cayenne pepper according to taste. For a solid kick of heat, use ¼ teaspoon. For just a small touch of zest to accent the other seasonings, use a large pinch.
Leftovers last covered in an airtight container for 3-4 days. Reheat in the microwave on medium heat or in the air fryer at 400 degrees for 2-4 minutes, or until heated through and crispy.
To make this recipe gluten-free, use coconut liquid aminos in place of the soy sauce.
Boneless skinless chicken breasts can substitute for the chicken thighs, though they won't be as juicy or crispy after air frying. For best flavor, use chicken thighs.
To double this recipe, multiply the ingredients by the desired amount and follow the recipe as directed, cooking the chicken in as many batches as you multiplied the recipe by. Keep cooked batches of chicken warmed on a cookie sheet in an oven preheated to 200 degrees.
