This 5 layer bean dip is creamy, cheesy, and ready in 10 minutes — taco-seasoned refried beans, guacamole, sour cream, salsa, and sharp cheddar cheese. The ultimate easy appetizer for game day, Memorial Day, or any potluck.
1cupsalsadivided (chunky, pineapple, or peach salsa all work)
2cupsguacamolestore-bought or homemade
1 ¼cupsour creamfull-fat recommended
1 ½cupshredded sharp cheddar cheese
optional toppingssliced black olives, minced sweet onion and cilantro, sliced fresh or pickled jalapeños, or pico de gallo
Frito scoops or torilla chipsto serve — pita chips, crackers, and cut veggies also work
Instructions
In a small mixing bowl, stir together the refried beans, chili powder, cumin, salt, and ½ cup salsa until smooth and combined.
Spread the bean mixture into an even layer in the bottom of an 8x8-inch baking dish.
Spread the guacamole into an even layer on top of the beans.
Spread the sour cream evenly over the guacamole.
Spread the remaining ½ cup of salsa over the sour cream.
Sprinkle the shredded cheddar cheese evenly over the top. Add black olives if using.
Serve immediately with tortilla chips, or cover tightly with plastic wrap and refrigerate until ready to serve.
Notes
Make-ahead: Assemble up to 24 hours ahead. Cover with plastic wrap pressed directly onto the surface and refrigerate. Add fresh toppings (black olives, cilantro, jalapenos) right before serving.
Leftovers: Store in an airtight container in the refrigerator for 2–3 days with plastic wrap pressed directly across the surface. The guacamole layer may discolor slightly, but it will still taste delicious. The dip does not freeze well.
Add heat: Add ¼–½ teaspoon cayenne pepper to the bean mixture, use spicy salsa, and/or spicy guacamole.
Vegan: Use vegetarian refried beans, dairy-free sour cream, and dairy-free cheese.
Greek yogurt sub: Plain 2% or whole milk Greek yogurt can substitute for sour cream.
Serving size: Serves 10+ adults as an appetizer. Double into a 9x13-inch dish for a larger crowd.
Make it a 7-layer dip by adding a layer of two of the following: drained canned corn, sliced green onions, seasoned ground beef, shredded rotisserie or sliced grilled chicken, or minced onions and cilantro.
