Beat the summertime heat with these delicious Mango Popsicles! Made with only 4 common ingredients in a few simple steps, these easy summer treats are creamy, cooling, fruity, and fresh. A hit with the whole family!
1-2tablespoonsmaple syrup(optional) depending on the sweetness of the mangos
1teaspoonlime zest
1tablespoonfresh lime juice
3cupschopped mangos4 champagne mangos or 1-2 large mangos
Instructions
Add all of the ingredients to a blender. Blend until smooth, for 15-30 seconds. Taste the mango mixture and blend in additional sweetener to taste, if desired.
Divide the mango puree among 6 popsicle molds.
Top the popsicle mold with its cover and insert the popsicle sticks.
Freeze the popsicles for 6-8 hours, overnight, or until frozen.
Run warm water over the bottom side of the molds to easily remove the popsicles from the molds. Enjoy immediately or freeze to enjoy later.
Notes
Storage: Remove the popsicles from the mold. Wrap them individually in parchment paper and placein a freezer-safe container or ziptop bag for 2-3 months
Adjust the Sweetness: Taste a bite of mango before adding the sweetener and add the expected amount of maple syrup, based on how sweet or tart they are. Taste the puree after blending and blend in additional maple syrup to taste if desired.
Remove Air from the Mango Puree: Gently tap the popsicle mold full of mango mixture on the counter before topping and adding the popsicle sticks. This will help release air bubbles in the popsicles.
Filling the Molds: Don’t fill the molds completely. Leave 1 tablespoon or so of room in the top of each mold, allowing the popsicles room to expand as they freeze.
