Mango Popsicles

Beat the summertime heat with these delicious Mango Popsicles! Made with only 4 common ingredients in a few simple steps, these easy summer treats are creamy, cooling, fruity, and fresh. A hit with the whole family!

Though making mango pops at home may seem intimidating, they really couldn't be easier! Simply slice up fresh mango and blend it with coconut cream, lime zest and juice, and maple syrup (if you like) before pouring it into popsicle molds and freezing. Summertime treats have never been more refreshing and easy!

Sweet and juicy in-season mangos shine in this recipe, but any of your favorite mangos will do. Maple syrup adds natural sweetness as needed without adding refined sugar, making for an equally delicious and healthy treat. Freezing takes up to 8 hours or overnight, so make these pops ahead of serving for optimal enjoyment.

Ingredients

Mango: You will need 4 champagne mangos or 1-2 of the larger red or green mangos. If you'd like to make the popsicles without sweetener, choose sweet in-season mangos that give slightly when pressed. Cut the mangos into cubes or slice the sides of the mango off the pit before scooping out the flesh. Though you can use frozen mango, it will take longer to blend.

Coconut Cream: Adds a rich creaminess to the homemade mango popsicles. Canned coconut milk can work in a pinch, but cream will add the best flavor.

Lime Zest: Lime's fresh and bright flavor is the perfect complement to mango, enhancing all of its tropical flavors. Freshly zest the lime for the best flavor, grating off just the top surface of the lime, as the white layer underneath can be bitter.

Lime Juice: Choose fresh lime juice if possible to elevate mango's summery flavors to new heights. Zest the lime first and then squeeze. You will need just 1 tablespoon of juice.

Maple Syrup (Optional): The caramel notes of this liquid sweetener enhance the fruit's natural sweetener when super juicy and sweet mangos are unavailable. For the best results, taste the mango before adding it to the blender and add your desired amount of maple syrup accordingly. Blend in additional syrup to taste after blending if needed.

How to Make Mango Popsicles

Step 1: Add all of the ingredients to a blender.

Step 2: Blend until smooth, for 15-30 seconds. Taste the mango mixture and blend in additional sweetener to taste, if desired.

Step 3: Divide the mango puree among 6 popsicle molds.

Step 4: Cover the popsicle mold with the cover and insert the popsicle sticks. Freeze the popsicles for 6-8 hours or overnight or until frozen.

Step 5: Easily remove the popsicles from the molds by running warm water over the bottom side of the molds. Enjoy immediately or freeze wrapped in parchment paper and placed in a freezer-safe container or ziptop bag for 2-3 months.

Recipe Pro-Tips

  • Adjust the Sweetness: Taste a bite of mango before adding the sweetener and add the expected amount of maple syrup, based on how sweet or tart they are. Taste the puree after blending and blend in additional maple syrup to taste if desired.
  • Remove Air from the Mango Puree: Gently tap the popsicle mold full of mango mixture on the counter before topping and adding the popsicle sticks. This will help release air bubbles in the popsicles. 
  • Filling the Molds: Don’t fill the molds completely. Leave 1 tablespoon or so of room in the top of each mold, allowing the popsicles room to expand as they freeze.
  • Freeze Until Frozen: Most popsicles will freeze within 6-8 hours. For ultimate peace of mind and thoroughly frozen popsicles, freeze them this long or even overnight. Then, just release the popsicles from the molds and enjoy!
  • Popsicle Releasing: Once frozen, remove the popsicles from the molds by carefully running warm water on the outside of the popsicle mold until ice pops can release easily.

  • Change the Fruit: Substitute fresh chopped mango, peaches, or even strawberries for the mango for a refreshing flavor twist.
  • Switch up the Sweetener: If using sweetener, swap in agave or honey for a different flavor essence in this mango popsicle recipe.
  • Yogurt Mango Ice Pops: Enhance the creaminess of these pops by substituting whole milk vanilla yogurt for coconut cream.
  • Spice: For the classic savory and spicy mango-Tajìn combo, blitz in 1-2 teaspoons of the seasoning blend to taste before pouring into the popsicle molds.
