Figuring out what to make for dinner doesn't have to be such a painful chore, but it often is.

Believe me -- I have those days, too. When It's 7 PM and Chris asks me what I'm thinking for dinner and I say, "I have no clue."

I used to turn to frozen pizzas and macaroni and cheese when in a pinch, but now, thanks to much trial and error and experimentation I came up with my 9 Meal Planning and Prepping Tips for Busy Runners and we're eating so much healthier without any extra stress.

I would tell you about how I'm wondering about why I didn't think of this sooner, but I digress. We're all on a journey, aren't we? What matters is that I'm happy to share these tips with you and I hope they help you take back dinner too!

  • Sheet Pan Chicken Fajitas

I'm confident that you'll love both of these recipes because they come together with minimal fuss and are flexible. They're also gluten-free and make enough to enjoy for days to come (a meal prep lifesaver!).

And seriously, I could write a full long post about how easy and delicious those sheet pan chicken fajitas are. I swoon at the thought of them -- they're perfectly spiced with just a touch of sweet and are beyond good tucked in a toasted tortilla!
