It's a snow day here in Northern Colorado; the perfect time to make a sweet and comforting treat!

Combining two of my favorite parts of childhood (Cocoa Pebbles or krispies + Rice Krispies Treats), these treats are pure comfort in the way only a nostalgic treat can be.

And thankfully, with all of the shoveling we have to do, these treats are super easy to make, too! In less than 20 minutes, we can go from a craving to a ready-to-eat snack. If that's not what we're looking for on a day like today, I don't know what is!

  • Quick. You can have these puppies on the table in less than 20 minutes! This recipe is simple, fast, and only calls for a handful of easy-to-find tools.
  • Easy to transport. Bring these treats to a birthday party, soccer game, pool party, or more. They will keep safely at room temperature for hours. Just keep them out of intense heat to keep the chocolate chips from melting.
The ingredients for chocolate Rice Krispies: semi-sweet mini morsels, mini marshmallows, unsalted butter, and a bowl of cocoa Rice Krispies.

Ingredients:

  • Cocoa Krispies or Cocoa Pebbles - either work by themselves or they can also be used together (in equal proportions).
  • Unsalted butter
  • Mini marshmallows
  • Mini semisweet chocolate chips

Substitutions:

  • Marshmallows - full size marshmallows can also be used
  • Chocolate - a shaved semi-sweet chocolate bar can substitute for the mini chips

How to make chocolate rice krispy treats:

  1. Melt the butter over medium-low heat.
  2. Add marshmallows and melt, stirring frequently, or until smooth.
  3. Remove the pan from heat. Add the Rice Krispies and stir gently until combined.
  4. Sprinkle chocolate chips onto the cereal mixture. Gently stir in until combined.
  5. Pour the Rice Krispies mixture into a prepared baking dish. Gently press down with a silicone spatula.
  6. Sprinkle the Rice Krispies with the remaining chocolate chips. Serve or cool the treats to room temperature before serving!

Recipe pro-tips:

  • Use a non-stick pan. The non-stick coating makes this recipe easier to make. The marshmallows don't stick to the pan as much and the rice crispy mixture is much easier to stir.
  • Remove the pan from the heat before stirring in the cereal and chocolate. This will keep the cereal from burning and the chocolate from melting too much before stirring in.
  • Measure out the Rice Krispies or Cocoa Pebbles ahead of time. Once the marshmallows have melted, the cooking time goes quick. Be prepared by having the cereal ready to go!
  • Bring the chocolate Rice Krispies Treats to room temperature before serving. If you prefer chewy treats and you store them in the refrigerator, let them warm up to room temperature before enjoying.

Why do Rice Krispies Treats get hard?

Rice Krispies Treats can get hard from exposure to air or from being cold. To keep them fresh, store them in an airtight container. They stay good this way up to 3 days. If you store them in the refrigerator, let them come to room temperature for 10-20 minutes before serving so they can get nice and chewy again.

What is the difference between Cocoa Krispies and Cocoa Pebbles?

Cocoa Krispies have a more mellow and malty cocoa flavor whereas Cocoa Pebbles have a richer and slightly sweeter chocolate flavor.

Storage directions:

Leftovers keep covered in an airtight container in the refrigerator or at room temperature for 3-4 days. See my notes above on bringing the treats to room temperature before enjoying if storing in the refrigerator.

Dietary adaptations:

This recipe is naturally gluten-free as long as you use Cocoa Pebbles (cocoa Krispies are not gluten-free, unfortunately).

To make this recipe vegan, substitute raw coconut oil for the unsalted butter and vegan marshmallows for traditional marshmallows and follow the recipe as directed.

Ingredients
  

  • 1 ½ tablespoon unsalted butter
  • 1, 16 oz. bag mini marshmallows or 6 cups
  • 7 cups chocolate Rice Krispies Cocoa Krispies or Cocoa Pebbles-- see notes above
  • 1 ¼ cup mini semisweet chocolate chips DIVIDED

Instructions
 

  • Prepare a 8 x 13-inch baking pan with non-stick spray or butter.
  • Melt the butter in a non-stick Dutch oven or stockpot over low heat for 1-2 minutes, or until fully melted.
  • Add marshmallows to the butter and melt, stirring frequently with a slicone spatula, for 2-3 minutes or until smooth.
  • Remove the pan from heat. Add the cereal and stir in gently until combined. Sprinkle 1 cup of the chocolate chips onto the cereal mixture. Gently stir in until combined.
  • Pour the Rice Krispies mixture into a prepared baking dish. Gently press down with a silicone spatula. Sprinkle the Rice Krispies with the remaining ¼ cup chocolate chips. Serve the treats or cool them to room temperature before serving!

Notes

  1. Leftovers keep covered in an airtight container in the refrigerator or at room temperature for 3-4 days. If stored in the refrigerator, bring to room temperature for 10-20 minutes before serving. This helps the treats soften up and get chewy.
  2. To make this recipe gluten-free use Cocoa Pebbles. Cocoa Krispies are not gluten-free.
