Gussy up summer produce and enjoy it in the most delicious fashion with this list of the Best Zucchini Recipes! With everything from zucchini muffins, bread, and pancakes to zucchini lasagna, boats, and casserole, there is something for everyone. Let's go!
We started growing a small garden a few years ago, planting zucchini, kale, yellow squash, basil, strawberries, and snap peas in two raised beds. Albeit humble, nurturing and harvesting seasonal fruits and veggies has only bolstered my obsession with warm weather produce. In the morning, my toddler and I water the plants. In the evening, we walk outside to see what's ripe and pick what we need for dinner.
Come July and August, the garden spits out zucchini at a lightning-fast pace, often dictating our dinners and leaving bonus veggies for baking. It's quite a life. 😉
Over the course of several summers of such zucchini cooking and baking, I've developed many recipes and shared many of them here on Mae's Menu.
Below is my collection of recipes (as well as a few from good friends) featuring and utilizing these deeply verdant squashes. With savory mains and sides and sweet treats like muffins, breads, cakes, pancakes, and more, I hope you'll be inspired by the list to reimagine this veggie, making so much of it this summer that you'll count down the days with me to next season. 😍
