How to Cut Zucchini for the Air Fryer
Different cuts give you different textures — here's what to know:
Half moons (recommended): Slice the zucchini in half lengthwise, then crosswise into ½-inch thick pieces. This gives you the most surface area for browning and is the easiest cut to toss in the basket.
Rounds/coins: Slice straight across into ¼–½-inch thick rounds. Great for thinner, crispier results — watch the cook time as thinner slices cook faster.

- Cut everything the same size — This is the single most important thing for even cooking. I go for ½-inch half moons — they're easy to cut, easy to toss, and give you great browning on the flat edges.
- Preheat the air fryer — A hot basket means the zucchini starts crisping immediately instead of steaming. Two to three minutes at 400°F is all you need.
- Don't overcrowd — Single layer is non-negotiable. Crowded zucchini steams instead of crisps and you end up with soggy, watery results. If your basket is large enough to fit everything at once, great — go for it. If not, cook in batches and keep finished zucchini warm in a 200°F oven.
- Toss every 3 minutes — This ensures all sides get contact with the hot basket and cook evenly. It's also how you catch it before it goes from golden to overdone.
- Small zucchini = better flavor — Smaller zucchini are sweeter, less watery, and have a firmer texture than the giant ones that take over the garden in August. If you can only find large zucchini, squeeze out a little moisture after cutting by salting them and letting them sit for 10 minutes, then patting dry.
- Add the lemon at the end — Squeezing the lemon over the finished zucchini (not before cooking) keeps the flavor bright and fresh. Cooking the lemon juice dulls it.

I have a LARGE zucchini I'd like to try. Do the slices have to be single layer or can they over lap a bit? Would you recommend cutting large slices in half or quarters? As my basked is about 8 1/2" I think it may take a few batches. Also, thinking of making a zucchini parmesan bake from the finished product. Should the slices be firm and not soft? Soft is what we're hoping to avoid. Thank you. Love trying new things in my airfryer.

Thanks for your comment. Your zucchini can overlap as long as you shake the zucchini throughout cooking (as directed). The zucchini will cook down as it air fries, but you do want to make sure there is room for the hot air to circulate around the zucchini so it cooks up evenly and doesn't get soggy.

I have chopped up zucchini and onion and tossed it in olive oil and Greek seasoning. Then hubby has a pan with holes and it goes out on the grill. But I didn't think of the air fryer. ( there wasn't one 40 some years ago lol ) I love zucchini !
